Chantelle and the team have created accessible five course menus to learn more about where food comes from and explore seasonality. The menu will explore and educate around conscious cooking centered around hyper-seasonal, sustainable produce from small-scale farmers and locally foraged ingredients, starting with a selection of snacks using off-cuts of vegetables that would ordinarily go to waste; followed by regeneratively farmed, and often underused cuts of meat and sustainably caught fish from the British Isles. The most important part being the sweet treat, whether its Chantelle’s pear, custard, crumble or the famed ‘chouxnut’ with baked apple and Hollis Mead double cream. And if this tickled the taste buds enough, parents can book ahead for cooking sessions in partnership with charity School Food Matters, involving relaxed sessions at the chef’s table downstairs with a selection of hands-on food activities.
