The team behind acclaimed cocktail bars Oriole, Nightjar and Bar Swift bring back PRELUDE by Oriole, the popular speakeasy which was forced to close in 2022 owing to the redevelopment of Smithfields Market. The three-month pop up bar in Covent Garden showcases some of the changes that will be coming to the proper Oriole 2.0 that will be set up later in the year, where cocktails are accompanied by an à la carte food offering. Drawing influences from various places and traditions, including Nikkei (Japanese-Peruvian fusion) and Argentine-Italian cuisines, the menu combines ingredients such as Mexican delicacy huitlacoche (corn smut), Peruvian ají amarillo (yellow pepper), koji, seaweed and matcha in a creative variety of dishes and desserts.
