Prevailing nothing but ocean and privacy, Nobu Santorini is a far cry from the crowded coves of the island’s villages.
It’s likely you’ve already tried Chef Nobu Matsuhisa’s dishes at one of his many restaurants around the world. Partnering with Robert De Niro in 1994, the duo co-founded Nobu Hospitality, extending the brand to hotels. The cool-luxury, minimal Japanese aesthetic has since taken over properties in 32 worldwide destinations.

One of the 220 Cyclades islands (24 are inhabited), Santorini is the supermodel of Greece. A picturesque haven of rugged landscapes and glistening white buildings amongst the cliffs, it’s one of the most romantic places in the world and ranks as one of the top destinations for honeymooners – you’ll see the loved up couples for yourself.
The Vibe
Set along the notable Oia to Thira walking trail, at the highest point of the Caldera cliffs, Nobu Santorini stays true to the vibe of the island; the hotel’s architecture is white-washed Cycladic perfection lined with calming greenery and unmatched blue skies. Fusing fine gastronomy with sleek design, you’ll start your Nobu journey with a Matcha green tea juice – a welcome drink reflective of the hotel’s Japanese roots – in a sun-drenched seating area overlooking panoramic ocean views.
Although the property is only in its second season, opening in June last year, operations run smoothly and you’ll feel well taken care of. Children only over the age of 14 are welcome, meaning those who are looking for a quiet, uninterrupted stay will find a place to truly disconnect. It’s also just a 15-minute drive from the airport, so you can maximise time reclined by the pool.
The Rooms
The hotel is self-contained and offers 25 suites, five of which are split-level villas with interconnecting rooms, perfect for families with teenagers or a group of friends. Each has its own private pool and terrace with sunrise and moon views. Miyabi Suites are on the ground floor at the front of the property and look out onto the pool and ocean, each complete with a private jacuzzi and terrace. Standing proud is the Nobu Suite, which you will find in every Nobu hotel around the world, boasting 360-degree views of the island from the private veranda, as well as a plunge pool. Across all, interiors are clean and uncomplicated, and white walls are enhanced with warming natural textures and calming textiles.
The Food + Drink
Enjoy poolside Mediterranean classics for lunch, with a focus on fresh seafood and salads, but save room for dinner with Nobu’s classic Japanese experience – the true star of the hotel. The famed chef’s iconic dishes, Yellowtail Sashimi with Jalapeno, Black Cod Miso, Nobu Tacos, Wagyu Dumplings and Seafood & Beef Toban Yaki are on the menu, best enjoyed overlooking the midnight skies and paired with a unique menu of cocktails.
Breakfast is served on the hotel’s rooftop terrace overlooking the ocean, a spot that couldn’t be a more heavenly place to start your day. Avocado toast, mango chia pudding and matcha lattes are all on the menu, but those who want a more authentic Greek experience can opt for local dishes such as kagianas, a simple combination of egg and tomato.
The Pool
The dual-level infinity pool looks out across the ocean and the Santorini Caldera, unique in its own beauty and one of the most famous attractions on the island. Marvel at the scenery while sipping on cocktails from the bar, or simply lie back and relax: sun loungers are aplenty, so you won’t be fighting for prime spots before breakfast. If you want to incorporate fitness into your wellness journey, the hotel’s state-of-the-art gym – which also overlooks the pool – will encourage even the most reluctant of guests.
The Little Extras
The bed – with a world-class Simmons Island Bouvet mattress – is one of the best we’ve tried and cocooned us well after the sun came up. The rooms also boast hand-thrown, contemporary ceramics from Greek-based Lava Toy and Homatino that you’ll be trying to smuggle into your suitcase when you leave, and chic, Nobu-branded woven sandals and a beach bag are available for you to use during your stay. The To-Do List
If you can muster the energy to leave your Nobu bubble, hike the Oia to Thira trail, stopping off at some of the quaint, picturesque villages on the way. For those looking to explore the idyllic island more exclusively, the hotel can arrange for a private yacht catered with onboard Nobu sushi and champagne. A sunset cruise is recommended, catching the last of the fiery sun, crowd-free, as it melts into the horizon. A great way to end the trip. It’s an A-list favourite for a reason.
